詳細な説明
募集後、参加者 (20 名) は、研究の目的と条件の詳細な説明を受け取り、インフォームド コンセントに署名します。 食事摂取量の評価は、24 時間の食事リコールを使用して実施され、消費された食品と飲料のデジタル写真登録と簡単な説明が使用されます (2 つの 24 回の食事リコールは、連続しない異なる日に適用されます)。 同時に、家庭用キッチンスケールを使用した食品の計量と飲み物の量の測定が参考になります。 栄養情報の分析のために、食品の写真から抽出された毎日の食品摂取量は、自動自己管理栄養評価ツール (ASA24®) に入力されます。 参加者が記録した実際の食品重量を使用した主要栄養素および微量栄養素の摂取量は、USDA FNDDS 2017-2018 データベースから推定され、ポリフェノール組成はフェノール データベースから推定されます。
各24時間の食事リコールの日に、参加者は24時間の尿サンプルを収集して、タンパク質、ナトリウム、およびカリウムの摂取量を評価します. さらに、24回の食事リコールの翌日、参加者は血液サンプルを提供して、ビタミンC、ビタミンB1、ビタミンK1、葉酸、亜鉛、銅、およびベータカロチンの循環レベルを決定します。糞便中の野菜種を識別するための糞便サンプル。
