在宅で宅配食(HDM)を利用している高齢者は食中毒のリスクが高く、特に食品の配達や安全な摂取を妨げる混乱にさらされやすい。 さらに、この集団内の人々の認知能力や身体能力には大きなばらつきがあり、経済的資源や社会的支援へのアクセスも個人的にも地理的にも異なります。 さらに、この人々にサービスを提供する機関は、重要な仕事を遂行するためにボランティアの時間と寄付に大きく依存しています。 したがって、それらを確実に実施するには、この集団内の食品安全問題に対処するために設計された介入が比較的単純で、効率的で、費用対効果が高いものでなければなりません。

研究:
- HDMの在宅高齢者受給者の家庭の食品環境の食品の安全性と品質パラメーターを分析し、この高リスク集団のメンバーによる安全な食品の取り扱いと保管の実践に対する具体的な障壁を特定します。 冷蔵庫/冷凍庫の温度を測定し、冷蔵食品は 40 °F 以下、冷凍食品は 0 °F 以下で保管されるように、必要に応じて調整が行われます。
- HDM を受けている在宅高齢者の家庭での食料供給の栄養密度と適切性を推定し、この集団が不足している栄養領域を特定し、特に緊急時に特定の栄養補給が有益であると考えます。
- HDM を受けている在宅高齢者の食品の安全性を向上させるために、2 つの介入が提案されます。1 つは、危険な可能性がある古い食品の摂取を防ぐために、食事に日付表示を付けることです。冷蔵庫/冷凍庫の温度をチェックして温度の遵守/メンテナンスを判断し、必要に応じて調整します。
